Well a lot of it really has to do with your own personal taste. I've noticed that as opposed to sticking to one style like, for example, Kaoru Wada (Inu Yasha, Ninja Scroll, Gilgamesh), most of the time Kanno's music varies depending on the series. For example, Cowboy Bebop has the best jazz ever to be put into an anime, but Escaflowne is known for its classical music. Possibly the three most debated soundtracks (in the question of what Kanno's best work is) are some of her earlier works: Cowboy Bebop, Escaflowne, and Macross Plus.
If you want to get a nice variety and get an idea of what her music's like, try Stand Alone Complex. Bebop has some variation as well, but this is much more the case in SAC, and the latter is also shorter and, being available in the US, much easier and cheaper to get.
Also Wolf's Rain was quite good. It's not as good as some of her other work, but for some lighter music, it's still sufficiently awesome. My only real issue is that "Could You Bite the Hand?" sounds out of place; it's good, but the lyrics make it sound like it belongs in Gungrave instead.
