What does evolution matters?

I have heard arguments from people saying the bible is false because human are evolved from "animal" (not ape mind you), but it seems to be begging the question of what to and when to classify shorter "people" as human. If someone earlier in history is born shorter, with smaller brain, because they are islander with little food sources, does that mean they must not be human? Even if we don't classify them as human, how does that disprove the bible, which merely mentioned human is created after animal?

I am quite discontent with those people who tried to push evolution (such as mutation of gene) as a religion instead of scientific theory used to explain observations given the current understanding of the world. Some of them seems to have a confusion with the terms fact and theory:

The term theory is no longer appropriate except when referring to the various models that attempt to explain how life evolves... it is important to understand that the current questions about how life evolves in no way implies any disagreement over the fact of evolution. If evolution isn't a theory, I don't know what is.
